The French Pastry School: What was your background previous to pastry, and what led you to pursue a pastry education?

Kristin Brill: Ironically, my background was in the Health & Wellness Industry.  I was a Program Director and Health Educator for a very successful national weight management program.  After beginning my career in the wellness industry I realized soon after where my heart and passion lied and that is with the art of pastry.  Going back to school to pursue pastry was always a dream of mine; once I found The French Pastry School I knew that my dream could soon be a reality.  This was the point in my life where I realized it is never too late and this was the time.       

FPS: What has been the most surprising or eye-opening moment for you so far in the program?

KR:I was most surprised by the support and encouragement from both the Chef Instructors and the staff at The French Pastry School.  Everyone is very supportive and they truly care about your success in the program.  The Chef Instructors are very humble and encouraging.  When mistakes are made they are the first to help you to problem solve and encourage you to stay positive. 

FPS: What are your plans following graduation?

KR:I plan to continue to build on my education and new skills by gaining as much experience as possible.  Whether this will be in a bakery or restaurant is still unknown, I am open to either.  I do know that I am very excited to begin this new journey and apply my new set of knowledge in the pastry industry.

FPS: Where do you see yourself in five years? Where do you hope to be?

KR:I am not sure where I will be in the next five years; however, I am excited to find out.  I eventually see myself as a business owner. Owning a Pâtisserie has always been dream of mine.

FPS: In the future, what will you look back on and remember most vividly about your time as a student at The French Pastry School?

KR:My experience at The French Pastry School has been an amazing, it was truly a once in a lifetime opportunity.  When I look back I will remember my classmates and instructors the most.  Since the classes are small you become very close with your peers very fast, you see each other every day and really begin to bond with one another.  I have made friends that I will know for a lifetime and I am very grateful for this opportunity.
